Trois Fois Vin!

After a long correspondence with Marie- Dominique - we are very excited to have Cocolico 2010 in the list of wines of the month on Trois Fois Vin.

Après une longue correspondence avec Marie-Dominique - nous sommes très content d'avoir Cocolico 2010 dans la liste des vins du mois de Trois Fois Vin.




Not only is she very knowledgeable and charming, but LOOK how cool her site is.  And orange is the color of the month. Half of the wines have orange in their labels! I feel a fad coming on!

Elle connait et parle très bien du vin.  Elle est charmante et REGARDE comment c'est beau son site!  L'ORANGE était la couleur du mois.  La moitié des étiquettes ont de l'orange dessus. Je sens un mode qui se lance!  Pour voir sa présentation de notre cher Cocolico c'est ici.




Raisins at Fat Cat Pie / Raisins Secs et Pizza

Nina, lovely grape grower's child that she is, LOVES raisins.  When she says raisins  it sounds more like ri -SHANGs.  She says it a lot.  When she went out to Fat Cat Pie Co. in Norwalk, CT with her sister and her parents (whose friends run the place and whose wine is on the wine list - see proud photo below) she and her sister went on a walk, in the lull between pizza and dessert. Everybody knows them so I figured they could move around a bit, as long as they didn't bother anyone. But the walk was to the kitchen. To get raisins.  On a plate.  I was not in on this. I should have known.
 
Nina, fille de vignerons qu'elle est, ADORE les raisins secs. Quand elle dit « raisins » ça fait « ri-ZAINGUEs ». Elle le dit souvent. Elle est allée au Fat Cat Pie Co dans le Connecticut avec sa sœur et ses parents pour manger de la pizza. On est potes avec tout le monde au resto et le Cocolico est sur la carte des vins (on en est tellement fiers qu'il y a une photo de la carte plus bas). Dans ce contexte, les filles se promènent tranquillement dans le resto entre la pizza et le dessert. Tout le monde les connaît et l'atmosphère est décontracté donc je les laisse bouger tant qu'elles ne gênent personne.   Mais cette promenade était ver la cuisine ! Pour chercher des raisins secs. Sur une assiette. Quelle idée ! J'aurais du le savoir.




 They were VERY pleased with themselves.

Elles étaient TRES fière de leur coup.

 Then there was cake. 
Et puis il y avait du gâteau.


It was a GREAT succes.
C'était un succès fou.

 

And there on the wine list -(three lines above Beer) is Cocolico!

Yummy  garlicky hot peppery broccoli rabe pizza and delish kale salad.
Yummy home made ice-cream-sandwich-dessert (chocolate chip cookies and lavender ice cream - I DREAM of them in France)
Yummy chocolate cake
and RAISINS
What more can a girl want?
 
Et voilà la carte des vins. Trois lignes en-dessus de « BEER » .. c'est Cocolico !


Super-bon pizza bien-ailé et pimenté, couvert pousses de brocoli et accompagné d'une salade mémorable de quinoa et chou frisé.

Super-bon sandwich - cookies au pépites de chocolat et de glace maison à la lavande ( j'en rêve encore!)

Super-bon gâteau au chocolat

et des RAISINS SECS

Here's the whole family in Fountainhead wine shop with Mark our buddy ... a card-carrying member of the Colline's American team! And yes all of those bottles are ours.  The Colline takes the US by storm!!

Voici toute la famille dans la cave à vin Fountainhead avec Mark, notre pote – et agent principal de Colline Amérique ! Et oui toutes ces bouteilles sont les nôtres. La Colline à l'assaut de l’Amérique !!

...so Did set her up for her close up with the wine named at the same time she was.  ( Lili actually wanted HER to be named Cocolico - that was Lili's contribution to our LONG list of names for Nina.  Lili was convinced that Cocolico was THE name for her sister so her parents - to avoid sadness and scenes decided that the Lili's beautiful name would be perfect for our new wine - Thanks Lili) -->

...et donc Didier la met en scène pour un gros plan avec le vin nommé en même temps qu'elle. (En fait Lili voulait appeler Nina Cocolico – c'était la contribution de Lili à note long liste de noms pour Nina avant qu'elle naisse. Lili était convaincue que Cocolico était LE nom pour sa sœur et pour éviter toute tristesse ou esclandre on a décidé que le beau nom proposé par Lili serait parfait pour notre nouveau vin – Merci Lili.)

Lili with the wine she named. (Cocolico is a mix of cock-a-doodle-doo and the name of the little red poppy so common in France - with a flashy orange label the color of the California Poppy! Such a story!) 


Lili avec le vin qu'elle a nommé. (Cocolico étant, bien sûr, un mélange de cocorico et coquelicot  - et la couleur flash est pour rappeler les pavots oranges de Californie – Quelle histoire!)

the 2012 is born / la naissance du 2012

Some of the wine above isn't really born yet. In fact none of it is, but meet some of the wines of 2012 anyway.

1 - On the left is the rosé fermenting looking like those terrifying mushy strawberry candies.  It will be lighter colored than that - but I love it when it looks like candy.  As it's fermenting it TASTES like candy too because it already has lots of fruit aromas and still has SUGAR.  I love sugar. This year it has a big grapefruit thing going on that I am a big fan of.  Don't worry, you can taste it in spring.

2 - The Carignan from the Hirondelle - the one we were picking when I had to bring breakfast to the guys on my bike. It's already got that dark fermented color .. but at the time of this photo - about three weeks ago - it wasn't dry either.

3 Grenache that had just been harvested.  Grenache is always slightly lighter colored in our wines but this one is just juice - you can see the really difference!

4 & 5 two vats of  Syrah that are blended to go into both Oiseau and Cocolico  and they are lookin purple. 

During the harvest and fermentation period we get everything out and taste it every day.  The difference from one day to another is proof that the wine IS ALIVE!

En fait le vin dans ces verres n'est pas encore vraiment né, mais voici certains vins de 2012 quand même. 

1- A gauche c'est le rosé en fermentation qui fait vraiment bonbon fraise Tagada.  Il va être un peu plus clair quand il sera fini- mais j'adore cet aspect bonbon.  Pendant la fermentation, il a un goût bonbon aussi - il y a des arômes de fruit accompagné du sucre...et j'aime le sucre. Cette année, c'est l'année pamplemousse et j'en suis fan.  Ne vous inquiétez pas, vous aussi, vous pourrez le goûter au printemps!


2 - Le Carignan de l'hirondelle - celui qu'on vendangeait quand il fallait amener le petit dej à vélo.  Il a déjà un couleur de vin fermenté... mais au moment ou cette photo a été prise il n'était pas sec non plus. 

3 - Jus de Grenache. Le Grenache est toujours un peu plus clair mais là ça se voit que la fermentation démarre à peine.

4 & 5 deux cuves de Syrah qui vont être assemblées dans l'Oiseau et le Cocolico - qui sont vraiment noir-violet .


Pendant la vinification on sort un verre de chaque cuve et on goûte tous les jours.  De jour en jour ça change énormément .. la preuve que le vin est VIVANT.
